Piggies Under Cover

Some mornings you just want something light and quick but yet different to make for breakfast.  This recipe is a favorite among my family and it is a no brainer to prepare.

Piggies Under Cover

Items Needed:
1 can of your favorite biscuits (I prefer the buttermilk kind with 10 in the can)
1 package of cocktail smoked sausages ( I use the 14 ounce package, as it usually yields about 38-40 sausages)
Cooking spray (I use Pam original spray)
Tin foil
Cookie Sheet 
Kitchen Scissors or Sharp Knife ( I prefer the kitchen scissors - quicker and safer )

Preheat oven to 400 degrees

Line your cookie sheet with tin foil and lightly spray with cooking spray.  After opening your can of biscuits, cut each biscuit into 4 pieces (yielding about 40 pieces total)

Press a biscuit piece with your thumbs until flat and wrap it around a cocktail smoked sausage. Repeat until all biscuits and sausages are gone.  You might end up with more biscuits than sausages or vice versus.  I normally put my sausages in a bowl and count them before I cut my biscuits and adjust accordingly. 

Place each biscuit covered sausage onto the cookie sheet leaving enough space for the biscuit to expand.

Place in preheated oven and cook for 10-12 minutes. Cooking time depends on your oven and how brown you want your biscuit on the bottom.

Remove from oven and enjoy!

This recipe can be adjusted to prepare any quantity that you wish to cook.
